Kiwi Cheesecake is a delectable and refreshing dessert that combines the creaminess of cheesecake with the tanginess of fresh kiwi fruit. This dessert is perfect for kiwi lovers who want to indulge in a unique and delightful treat.

Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 4 (8-ounce) packages of cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream

For the kiwi topping:

  • 4-5 ripe kiwi fruit, peeled and sliced
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

Preheat your oven to 325°F (160°C).

Crust:

  1. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
  2. Press the crumb mixture into the bottom of a 9-inch (23 cm) springform pan to create an even crust. You can use the back of a spoon to pack it down firmly.
  3. Place the pan in the preheated oven and bake for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

Cheesecake Filling:

  1. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Mix in the flour and sour cream until the batter is smooth and well combined.
  4. Pour the cheesecake filling over the cooled graham cracker crust.
  5. Bake in the preheated oven for about 50-60 minutes or until the edges are set, and the center is slightly jiggly.
  6. Turn off the oven, crack the oven door, and allow the cheesecake to cool in the oven for about 1 hour.
  7. Remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight to set completely.

Kiwi Topping:

  1. In a small saucepan, combine the sliced kiwi, sugar, water, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens and the kiwi slices soften. This should take about 5-7 minutes. Remove from heat and let it cool.
  2. Once the kiwi topping has cooled, spread it over the chilled cheesecake.
  3. Before serving, you can garnish with additional kiwi slices, whipped cream, or mint leaves if desired.
  4. Slice and serve your delicious kiwi cheesecake. Enjoy!

This kiwi cheesecake is a delightful dessert that combines the sweetness of the cheesecake with the tartness of kiwi fruit. It's perfect for any occasion and is sure to impress your family and friends.
