Recipe: Apple & Blackberry Cheesecake

Here's a delicious recipe for an Apple & Blackberry Cheesecake:

Ingredients:

For the Crust:

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted

For the Filling:

  • 500g cream cheese, softened
  • 150g granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 200g blackberries (fresh or frozen, thawed)
  • 1 large apple, peeled, cored, and diced

For the Topping:

  • 200ml heavy cream
  • 1 tbsp powdered sugar (optional)
  • Extra blackberries and thin apple slices, for garnish

Instructions:

Prepare the Crust:

  • Preheat your oven to 180°C (350°F).
  • Mix the crushed biscuits with the melted butter in a bowl until the crumbs are fully coated.
  • Press the mixture into the bottom of a springform pan (about 9 inches) to form an even layer.
  • Bake for 8-10 minutes, then set aside to cool.

Make the Filling:

  • In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.
  • Gently fold in the diced apple and blackberries.
  • Pour the filling over the cooled crust, spreading it out evenly.

Bake the Cheesecake:

  • Place the cheesecake in the preheated oven and bake for about 45-55 minutes, or until the edges are set and the center is slightly wobbly.
  • Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for about an hour to prevent cracking.
  • Transfer the cheesecake to the fridge and chill for at least 4 hours, preferably overnight.

Prepare the Topping:

  • Whip the heavy cream with powdered sugar (if using) until soft peaks form.
  • Spread or pipe the whipped cream over the chilled cheesecake.

Garnish and Serve:

  • Garnish with extra blackberries and thin apple slices.
