Here's a delicious recipe for an Apple & Blackberry Cheesecake:
Ingredients:
For the Crust:
- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
For the Filling:
- 500g cream cheese, softened
- 150g granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 200g blackberries (fresh or frozen, thawed)
- 1 large apple, peeled, cored, and diced
For the Topping:
- 200ml heavy cream
- 1 tbsp powdered sugar (optional)
- Extra blackberries and thin apple slices, for garnish
Instructions:
Prepare the Crust:
- Preheat your oven to 180°C (350°F).
- Mix the crushed biscuits with the melted butter in a bowl until the crumbs are fully coated.
- Press the mixture into the bottom of a springform pan (about 9 inches) to form an even layer.
- Bake for 8-10 minutes, then set aside to cool.
Make the Filling:
- In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in the diced apple and blackberries.
- Pour the filling over the cooled crust, spreading it out evenly.
Bake the Cheesecake:
- Place the cheesecake in the preheated oven and bake for about 45-55 minutes, or until the edges are set and the center is slightly wobbly.
- Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for about an hour to prevent cracking.
- Transfer the cheesecake to the fridge and chill for at least 4 hours, preferably overnight.
Prepare the Topping:
- Whip the heavy cream with powdered sugar (if using) until soft peaks form.
- Spread or pipe the whipped cream over the chilled cheesecake.
Garnish and Serve:
- Garnish with extra blackberries and thin apple slices.
- Slice and enjoy your Apple & Blackberry Cheesecake!
