Here's a recipe for Pumpkin Apple Cheesecake:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

For the apple topping:

  • 2 large apples, peeled, cored, and thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture evenly into the bottom of the prepared springform pan.
  3. In another mixing bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and cloves until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake in the preheated oven for 45-50 minutes, or until the center is almost set. Remove from the oven and let it cool for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely, then refrigerate for at least 4 hours or overnight.
  6. While the cheesecake is chilling, prepare the apple topping. In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes. Remove from heat and let it cool.
  7. Once the cheesecake is chilled and set, arrange the caramelized apple slices on top of the cheesecake.
